Creamy Parmesan Italian Soup

Ingredients

1 lb. Italian sausage

8 c. chicken broth

2 tsp. Onion powder

1 tsp garlic powder

1 tsp parsley

1 tsp. Basil

1 tsp. Salt

½ tsp pepper

½ tsp red pepper flakes

15 oz. pinto beans

8 oz. macaroni pasta

½ c. milk

½ c. parmesan cheese

4 oz. cream cheese

Instructions:

  1. Drain and rinse pinto beans.
  2. In a large pot over medium - high heat, brown the sausage.
  3. Drain off fat.
  4. Mix in broth, onion powder, garlic powder, parsley, basil, salt, pepper, red pepper flakes, pinto beans, and macaroni.
  5. Bring to a boil then lower heat to medium and cook until noodles are just about done. About 8 minutes. 
  6. Mix in milk, parmesan, and cream cheese. Cook until everything is melted into the soup. 
  7. Serve and enjoy with friends and family.

Prep Instructions: This soup can be prepared up to 8 hours in advance and kept warm in a slow cooker.

Healthy Eater Notes: You may want to try substituting bone broth in place of chicken stock. It is loaded with nutritional benefits and adds even more protein to your meal.
